A training book on Protected Designation of Origin (PDO) cheeses for cheesemongers, created by Trevor Thomas, a Certified Cheese Professional, at the request of his employer, the dairy company Lactalis.
Twenty five cheeses are described, providing each with a bit of historic background and illustrations and notes describing aspects their unique processes of production. The cheeses are mostly from France, but a few from Italy and one from Spain are also included.
In addition, it also provides a brief background on the impetus and implementation of the regulatory appellations of origin (EU: PDO, France: AOC, Italy: DOP) and gives and introduction to each of the cheese making regions in France (Normandy, Ile-de-France, Franche-Comte, Rhone-Alpes, Auvergne, Aquitaine, Midi-Pyrenees, Provence-Alpes-Cote d'Azur, and Corsica), as well as Lombardy and Veneto in Italy and Spain's Castilla-La Mancha.
The author, Trevor P. Thomas, has been a Specialty Cheese Broker, a Regional Manager for the Lactalis Group, and since 2018 has been Lactalis' lead in Cheese Education and Retail Merchandising across the United States. His writings can also been seen on his blog, Cheese Traveler.
